Four basic things you should verify before attempting Japanese recipes:
1. Have or obtain all the appropriate ingredients. Substitutions can be made but could alter the cooking time, the flavor and/or the or the appearance of your dish.
2. Make sure none of your products are expired. (Just because the item is hard to find doesn’t mean it doesn’t expire!)
3. Make sure you have the proper tools or ones that perform the same function.
4. Always ALWAYS read the recipe through before you start it.
