Easy Roasted Carrots

While I was a work today, I couldn’t stop thinking about steak and Roasted Carrots!😍

I’ve never made roasted carrots before but they are super simple and soooooo good! I followed along with this recipe from Delish and they turned out great!

Instructions:

2lbs of carrots peeled and sliced. Toss with 3 tbsp olive oil and salt and pepper to taste. Roast at 400° F for 30 minutes. Pierce thickest part carrot slices to make sure they are cooked through. Serve and enjoy!

Notes:

  • I left mine in the oven for an additional 5 minutes so they could brown a bit more, but they were already cooked through!
  • If you’re not used to peeling veggies like me, carrot prep will take a lot longer than 5 minutes! It took closer to 20! 😅
  • You can use baby carrots to speed up this process!
  • You can use herbs too! Next time I’d like to try it with fresh rosemary!
